Why the slope matters to an ice machine
An undercounter ice machine melts and rinses water all day, and that water has to leave. A gravity drain needs a steady fall to an open drain: Sub-Zero’s installation guide for its UC-15I asks for a quarter inch of fall for every foot of horizontal line, and says an air gap will likely be needed. Where a lower-floor bar has no drain low enough, the machine is ordered with a drain pump instead, and that pump becomes one more part that can stop.
The same guide gives a check anyone can do. Pour a gallon of cold water into the empty bin; it should be gone within a minute. If it stands, the drain tube is kinked or the drain run is wrong, and no amount of work on the ice-making side will cure the puddle.
The kitchen unit upstairs
The built-in in the kitchen is fed from the same house supply, often by a line brought up from below. When that line is long or narrowed along the way, the fill arrives weak, the cubes come out small, and the ice maker gets blamed for a flow problem.

Frost sheeted across the back wall again within a fortnight however often I scraped it clear. A bimetal had stopped closing, so the heater never ran long enough. Replaced, cycle timed twice, wall still clean.

Cubes coming out hollow and cloudy, which I assumed meant the whole module. Pressure at the valve was low and the module was fine once its screen was cleaned. He could have sold me the expensive part.

Water pooling under the crisper drawers every couple of days. The drain line was iced up behind the rear panel; he cleared it and changed the thermistor. Dry since. The part took four days nobody warned me about.
